The GF/DF life + Intermittent Fasting + Quilts and Family dinners

Ok guys,

So as most of you know, I’ve been having issues with two Immune Diseases, EOE (Eosinophilic esophagitis which is a chronic, allergic inflammatory disease of the esophagus), something with my bowels and gut, and my eczema (which is most likely caused by my allergy to dairy)

So, once I found out I am allergic to dairy and have an intolerance to gluten and eggs, I cut those three food allergens out (it has been HARD, and have only recently and I mean –recently seen ANY changes).

Thankfully, my family members have been AMAZING!  Over Christmas, my aunt made gluten free foods JUST for me at our Christmas Eve annual event, and my girlfriend made me gluten/dairy free peanut butter balls knowing they are my favourite holiday treat (thanks Katie!) My brother- in- law made an amazing gf/df meal for Christmas dinner and my mom, who has us over for supper often, has been making meals that are GF/DF and sending them home with me for leftovers- score!

And even last night, my dad and step mom had us over for supper and served the girls spaghetti and meatballs, and I had shredded broccolli and meatballs (I had never thought of this as an alternative and it was DELICIOUS and SO easy as it comes in a bag and all you need to do is microwave it to make it soft and noodle-like).  AND, for dessert, they made these delicious single serve desserts for everyone but went out and got me a pumpkin gluten/dairy free cookie!  Super sweet.

So, I’ve been doing a LOT of research to help my body heal, so I can stop living in fear of being far away from a bathroom, and I’ve been reading this book that Matt gave me for Christmas (if you read my blog post earlier, he actually gave it to me prior to Christmas, as I had coincidentally found it online and wanted to buy it not knowing he had already done so.  He was nervous we’d end up with two copies, so he gave it to me early)

And it’s been really eye opening.  It also lead me to do more research as it indicated that MANY COMMON (I stress COMMON auto immune disease- which is what I have, because MS is also an autoimmune disease, but is way different than having EOE or Celiac Disease for instance), auto immune diseases have many triggers and causes, but ONE main cause is inflammation within the body.  I have inflammation within my esophagus which caused EOE, and inflammation in my gut and bowels, which caused whatever is going on.

SO, apparently Intermittent Fasting is an excellent way to reduce inflammation in the body.

So, I thought, hey, let’s give that a try.

There are many different kinds, like 5:2, eating regular for five days, and then for two days you limit yourself to 500 calories.  I could not do that.  But, there is also 16:8, which is much more achievable, as you can fast while you sleep and then eat within an eight hour period.  So, eat from 9-5, or 10-6, or 12-8.  Whatever works for your schedule.

I’m giving it a go, and am ALREADY seeing WAY less of the bathroom- so that’s a BONUS!  Also, you can still drink water, black coffee, teas, or bulletproof coffee during your fasting time, so that makes life easier.

I’ve been eating from 10-6 and I’m enjoying it and not hungry outside of those hours, which is surprising as I eat a lot and love food.  I also start my day with a cup of black coffee and a cup of bulletproof coffee.

BPC-This is black coffee, with a teaspoon of MCT oil, and a teaspoon of Ghee butter (dairy free) and a teaspoon of collagen, and then I blend it in my mini blender.  It looks like a latte, and tastes like a latte.  It’s amazing.

And as I said earlier on, we had supper at dad’s and Becky’s last night.

Becky showed the girls how to build their own salad- and they picked out many veggies and ate the whole thing.

And then we had dessert.

Theirs- except the girls had a secret surprise (reece cup) waiting at the bottom of theirs.  I guess it was super yummy.

And then we played a dice game where you roll and get a L, R, C, or a dot, and if you get the dot you keep all your pieces, if you get an L or R you pass a piece to the player to your left or right, and if you get a C you put it in the centre bowl.  The person with the last pieces wins.  It was SUPER fun.

We went in separate cars, as I came from work and Matt and the girls came from home, so on the way home, Leah went with daddy, and Lily came with mommy.

I think she was tired.  Haha.

We also went, so I could give all my Camp Centennial shirts to Becky as she is going to look into making me a memory quilt made out of them!  I’m super, duper excited about this!  She’s an amazing quilter, so it is going to look amazing!

This was the pic I had gotten from Matt’s aunt- she had one made for her daughter and son, and this is sort of the vision I had for mine.  I’m excited!
